South African BobotieBobotie

Ingredients

  • 30ml olive oil.
  • 2 red onions, chopped.
  • 2tsp chopped fresh garlic,
  • 3-4 tsp medium curry powder.
  • 2 slices brown bread, soaked in water for 10 minutes.
  • 2 x 400g cans lentils, drained and rinsed, can be done with minced meat as well.
  • 1 Tbsp white wine vinegar
  • 1 Tbsp apricot jam
  • salt & freshly ground black pepper to taste
  • 2 eggs
  • 160ml or milk
  • ½ tsp turmeric
  • 6-8 bay leaves
  • a few slivered almonds

Method

  • Heat the oil in a saucepan and gently fry the onions until soft.  Add the garlic and cook for 1 minute, then add the curry powder and cook for a further minute until fragrant.
  • Squeeze out the excess water from the bread and add the bread to saucepan, together with the lentils, vinegar and jam.  Mix well and season to taste.
  • Transfer the mixture to an ovenproof casserole and smooth over the top.
  • Preheat the oven to 160°
  • Combine the eggs, milk and turmeric in a jug and season well with salt and pepper.
  • Pour the egg mixture over the bobotie, spike with the bay leaves and scatter the almonds.
  • Bake for 20-30 minutes or until the is set.
  • Serve with yellow rice, chutney and sliced banana.

Ingredients

  • 2 Tbsp sliced olives.
  • 3 tomatoes.
  • 1 cucumber small diced.
  • ½ red onions finely chopped.
  • ½ green bell pepper chopped into small pieces.
  • 2 Tbsp dried mint.
  • Add salt and pepper.
  • 4 Tbsp juice of 2 large lemons.
  • 3 Tbsp extra virgin olive oil.
  • 3 Tbsp parsley chopped.

Method

  • Remove the pips of the olives. 
  • Cut the tomatoes in small cubes and put into a colander to release excess liquid.
  • In a large bowl, place the diced tomatoes, cucumbers, onions, olives and bell pepper.
  • To flavor, mix the juice of the lemons and add the olive oil, and drizzle over the salad just before serving.
