Delicious Paella Salad

  • 2Tbsp oil
  • 4Tbsp butter
  • 2 onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 cinnamon stick
  • 1Tbsp mild curry powder
  • 250g uncooked rice
  • 1 tsp turmeric
  • 3 chicken stock cubes
  • 4 x 250ml boiling water
  • 125g bacon
  • 1 red pepper, seeded and diced
  • 1 green pepper, seeded and diced
  • 250g mushrooms
  • 6 chives, chopped
  • 2 stalks celery, sliced
  • 2 large tomatoes, skinned & diced
  • 1 cup frozen peas
  • 125g stuffed green olives

  • salt and pepper to taste

  • Heat the oil and butter and saute the onion and garlic until soft.
  • Add the cinnamon powder and stir for 1 min.
  • Add the rice and stir lightly.
  • Add the Turmeric and chicken cubes to the boiling water and pour over the rice.
  • Cover and simmer slowly until all the water has been absorbed and the rice is soft.
  • Fry the bacon until crisp. Remove from the pan and chop finely.
  • Sauté the peppers, chives and celery in the bacon fat until soft.
  • Add the mushrooms and stir-fry. 
  • Add the tomatoes and peas and simmer till soft.
  • Add the olives and the vegetable mixture to the rice mixture.
  • Season well with salt and pepper and mix.
  • Serve hot

Chicken and Litchi Salad




  • 1 kg chicken breasts fillets
  • salt and pepper
  • Olive oil


  • Season the chicken with salt and pepper.
  • Arrange in a single layer in a roasting pan.
  • Drizzle with oil and bake for 30 min

Curry Sauce

  • Olive Oil
  • 2 small onions chopped
  • 2 - 3 tsp roasted curry powder
  • 1tsp ground Cumin
  • Zest and juice of one lemon
  • ½ cup good quality mayonnaise
  • ½ double cream Yoghurt

Curry Sauce

  • Heat a little oil in a pan and stir-fry the onions until soft.
  • Add the curry powder and cumin and mix.
  • Remove from stove and stir in the rest of the sauce ingredients.
  • Add chicken mix.



  • 1 large can Litchis drained (keep syrup).
  • 2Tbs Poppy Seeds
  • 80ml Lime Juice
  • 2Tbs Thai fish sauce
  • 3 Tbs canola Oil


  • Mix 80 ml of the litchi syrup with the rest of the ingredients (except the Lychees).



  • 30g Rocket
  • 1 -2 Celery stick sliced into strips with potato peeler.
  • 1 green apple, thinly sliced.
  • 1 large handful of walnuts chopped.
  • 3 tomatoes cut in quarters.

  • Add litchis to the chicken and gently mix.
  • Arrange the rocket, celery and apple on a platter and drizzle a little of the dressing.
  • Spoon the chicken mixture on top and scatter the walnuts over.
  • Serve Cold
