Baked Chicken

Baked chicken time  today.

Greetings to all my fellow home cooking chefs here on the East Coast of Africa and around this beautiful world we live in.

Today I thought we can show you a classic recipe for baked chicken, with fresh mozzarella balls.

Sounds great, doesn't it and believe me it is a great chicken recipe making your family and guests coming back for seconds.

I did a little research a couple of months ago and thought you may enjoy reading the results, on what is the most used meat in the world.

Was a big surprise to discover how chicken seems to rule.

America may think of itself as a nation of beef eaters, but for the first time in over a century, Americans are consuming more Chicken than Beef (according to Price Ecnomics reports.)One of the reasons is that red meat has been linked to heart disease and diabetes. 

The price of Beef has been rising and in 2012 the average price per pound was $5.02, up from $3.32 per pound In 2002.

In 2013 Beef prices reached and average of $5.36 per pound, while broiler Chicken were only $2.03per pound, according to Beef Magazine.

In 2012, Americans were eating almost 60 pounds of chicken each yearly.

AND NOW IN 2020 during the Corona Virus, you can see how it has gone up since this information was put on in 2012 

Further Highlights from research show.

Pork is the most widely consumed meat in the world, followed by Poultry, Beef and Mutton. Poultry production is the fastest growing meat sector, increasing 4.7 percent in 2010 to 98 million tons.

Okey Dokey enough of the research on Chicken, it's time to get on cooking our delicious Baked chicken.

Ingredients for Baked Chicken

You will need the following ingredients.

  • 1 rotisserie chicken broken in pieces.
  • 50 gr black olives pitted.
  • 100gr fresh Mozzarella cheese balls.
  • 1 onion chopped.
  • Skin slices of Salami(I'll leave amount of slices up to you).
  • 2 garlic cloves crushed..
  • 1Can (400g) chopped tomatoes.
  • 1Pinch smoked Paprika..
  • Salt and Pepper to taste.
  • Oil for frying.
  • 1 pinch sugar

Great now we have got the above together.

Time out to enjoy cup/glass of your choice and read the above interesting research on Chicken.

                                              "Start a Cooking"

  • Preheat your oven 200 °(380f)
  • In a frying pan, add oil, onions and garlic, fry until soft.
  • Add tomatoes, paprika and bring to a boil.
  • Season with salt and pepper
  •  Add olives.
  • Arrange chicken pieces in an oven proof dish.
  • Pour over the sauce.
  • Top with the Mozzarella cheese and salami.
  • Bake for a further 20minutes or until cheese has melted.
    Great stuff you have just completed a delicious chicken bake that will go down well with your family and quests.

    Time out now to enjoy a glass of your favourite beverage, before summoning the family to the dinning table I bet you as soon as the baked chicken was taken out of the oven and the fragrance hit the air they were already making there way to the table)


There are plenty ways of serving this tasty chicken dish, please see a couple of ideas we added,

  • Serve with Salsa{see recipe below for Salsa}.
  • With savoury rice.
  • With any continental cold salad.
  • French garlic loaf.
  • Medley of baked or Roasted mixed veggies.
  • Sprinkle fresh Basil leaves and roasted sunflower seeds.
  • Broccoli.
  • Cauliflower and Broccoli bake

Recipe for Salsa

  • 2 Cucumbers deseeded and diced.                             
  • 1 Red Onion small diced
  • 2 Roma Tomatoes diced 
  • 10m (2tsp)Basil presto.
  •  ½ Red Bell Pepper diced
  • 2 green olives piped and chopped.
  • Salt and pepper to taste.
  • Handful chopped Chives.

  • Combine all vegetables in a bowl(except chives) and season with salt and pepper to taste.
  • Sprinkle with chopped chives 
  • Add any additional seasoning desired (mint, jalapeño, cilantro.
  • Serve with chicken.
