Greetings to all my fellow home cooking chefs here on the East Coast of Africa and around this beautiful world we live in.

Today I thought we can show you a classic recipe for baked chicken, with fresh mozzarella balls.


Ingredients for Baked Chicken

Ingredients

Method

  • 1 rotisserie chicken broken in pieces.
  • 50 gr green olives pitted.
  • 100gr fresh Mozzarella cheese balls.
  • 1 onion chopped.
  • Skin slices of Salami(I'll leave amount of slices up to you).
  • garlic cloves crushed..
  • 1Can (400g) chopped tomatoes.
  • 1Pinch smoked Paprika..
  • Salt and Pepper to taste.
  • Oil for frying.
  • 1 pinch sugar
  • Preheat your oven 200 °(380f)
  • In a frying pan, add oil, onions and garlic, fry until soft.
  • Add tomatoes, paprika and bring to a boil.
  • Season with salt and pepper
  •  Add olives.
  • Arrange chicken pieces in an oven proof dish.
  • Pour over the sauce.
  • Top with the Mozzarella cheese and salami.
  • Bake for a further 20minutes or until cheese has melted.

There are plenty ways of serving this tasty chicken dish, please see a couple of ideas we added,

  • Serve with Salsa  {see recipe below for Salsa}.
  • With savory rice.
  • With any continental cold salad.
  • French garlic loaf.
  • Medley of baked or Roasted mixed veggies.
  • Sprinkle fresh Basil leaves and roasted sunflower seeds.
  • Broccoli.
  • Cauliflower and Broccoli bake
  • Serve with Salsa  {see recipe below for Salsa}.
  • With savory rice.
  • With any continental cold salad.

Recipe for Salsa

  • 2 Cucumbers deseeded and diced.                             
  • 1 Red Onion small diced
  • 2 Roma Tomatoes diced 
  • 10m (2tsp)Basil presto.
  •  ½ Red Bell Pepper diced
  • 2 green olives piped and chopped.
  • Salt and pepper to taste.
  • Handful chopped Chives.

Method for Salsa

  • Combine all vegetables in a bowl(except chives) and season with salt and pepper to taste.
  • Sprinkle with chopped chives 
  • Add any additional seasoning desired (mint, jalapeño, cilantro.
  • Serve with chicken.
